I've seen threads referencing the ECS P4M800PRO-M2 V2.0 motherboard where the individual had all kinds of difficulties running 2 GB of RAM, while with 1 GB everything runs fine. I was wondering (as I am not really a hardware person) is it possible that this same MB will work with 2 GB of RAM when running with a good dual core processsor like a E6600 or E6700, while with a lower end processor like an E520 or Celeron only 1 GB works?

The problem you described was most likely not due to the memory size, but due to an interface compatibility problem with the 2gb chip.

Not only do home builders suffer from poor quality parts the big guys do also. They tend to hide it or find it earlier.

It would be unlikely that an unstable board would perform better with a different processor. The power or memory management is at fault most likely, not the channel to the processor. You could always test it with advanced tools and software or swap until you drop method. My guess is it won't fix it.

I read it wrong and answer it wrong too. So get off my case you low-branching widely cultivated annual herb Arachis hypogaea of the legume family with showy yellow flowers.

Remember to take issues posted here at face value. The OP had issues, but you don't really know what caused them. There could be a host of reasons why that system had problems running 2GB of RAM. Could have been non- recommended RAM, mixed brand/ speed/ cas, defective board, corrupt OS installation, etc.

Not all ram that you think should work in your mboard will work - it has to be compatible with the mboard, particularly it's chipset. If the ram isn't compatible, in the worst cases the mboard will not boot at all and may not even beep, but it's quite possible to have other problems.
You can check which ram will work in your mboard for sure - is compatible with it - on ram manufacturer's or major ram distributor's web sites by using your mboard make and model or your name brand system make and model - if the ID string of module you were thinking of using or buying is not on that list, there's no way of telling whether it is compatible with your mboard, and whether it will work in your mboard is a crap shoot.
