You can but you will only ever be able to use one at a time just as you can only make one telephone call at a time but can have numerous telephones connected.

When receiving a fax, will it print to both or can I choose a default to send it to?

No it will only print to one, whichever one answerers the incoming call first which generally will be the same on every time.
It you want it to print on a particular one every time set it to answer on the third ring while the other should be set to answer on the fifth ring.

What is the advantage of having two FAX machines connected to one line. You aren't going to get any more productivity out of that. When a FAX is incoming or outgoing the line will be tied up.
