Im building a computer and am somewhat on a budget...i was wondering if just having 1 XFX GTX 295 would be sufficient enough or if i should run 2 XFX GTX 260's.
Just asking cuz the one card is over 500 alone and the second card i mention i can get 2 of them for cheaper.
I also could just have the 1 running now and eventually get a second one later on.

You should list all your system specs. There's no point getting a high end video card if you have a weak CPU, it will only be bottlenecked. And you definitely will need a decent power supply, especially if you're planning to run two cards in SLi. You don't necessarily need a high wattage PSU (1000W for example), but you do need one with high amperage. And units with a single high amperage +12v rail are generally better than units with multiple +12v rails. The following article will help explain:

Pretty high end, except for the PSU. You'll never find an Apevia in one of my builds. Johnny Guru gives it a 5.5 out of 10 & rated the performance as "dismal".

If you look at this chart, a single GTX 295 beats 2x GTX 260 in SLi:
