My 8 Core Xeon Rig Wants to Play!?

I have a server I built not long ago, mainly for testing server applications and storage. I built it from scratch earlier this year, got 2 xeon quad cpu's - 2.0 ghz (12mb l2 cache) - ram is 8gb, 4X150gb 15k scsi raid 5 and 1 500gb sata with one ATI Radeon 3870 512 ddr4 pci-e 2nd generation car (expandable to 2 cards) and I wanted to use it to play some games like when I was younger on my spare time. Now there are things I know it won't do as well, since it's made for multi-threading apps and a lot of game developers are ignorant and simple minded and barely caught onto devloping for dual core. I was running a benchmark of pcmark 06, and didn't even finish it since I just remembered that it's probably using only one or two of my 8 cores from my two CPU's, set aside it will probably still run virtually all new games fine on reg resolution.
My question-since I'm out of the game loop is are there any games you know off hand that support quad core cpu's - on top of that do you even think any games would take advantage me having 2 quad core cpus? Can I hope in the future if bad case be, for games to to be able to adopt of quad or, in my case 8 core systems?
