One 8800 GTX or Ultra would completely destroy/spank/liquify/obliterate/demolish two 8600 GTS cards in SLI.
The 8600 cards wouldn't even come close.

Generally speaking, SLi & Crossfire configurations are a waste of money. Go with a single card solution.
