I found this ultra old Parallel port HD enclosure (well, it
seems Parallel port, as it has two ports, Computer, and
Printer), that is equipped with a Maxtor 1.2GB drive.

How in the world am I going to get this to work? It's age
is about that of DOS 6.22, but I can't find a way to get it to
be recognized.

Do drivers exist for a machine like this? There's no model
or make on it.

Only thing I can find is the chip inside...

You might try this:

Its 'readme.txt' file confirms it has dos drivers.

When you download it's easiest to use the 'view a series of ads' option. There is no benefit to registering and doing so will limit your downloads.

If you're just wanting the data off of it, it might just be better to disassemble it and hook it (internally) to another PC...

T-R-A, thanks, that one worked great. All the other ones
either didn't find the drive, or locked up the system.

My intent was to use this enclosure with my old 8086 based
computer with an IDE drive (as all it can handle is an MFM
drive).

I know have an IBM Model 25 XT with a 3GB hard drive.
