quicktime does not recognize the xvid format my movie files are in so what software will I need to change the xvid to a recognizable file for quicktime/itunes?

You need to convert the avi to mp4 format so that you can put it onto iPod,
Here is an iPod converter, it can help you convert the avi to mp4 and transfer it to iPod when coversion completed.
