Printing with custom color

I have a Cannon MP360 (Color), I want to Install 2 instances of the printer, one should only be able to print Black and white when it is chosen, and the other color(or it doesn't matter)
I have been working around the Color Managment profiles but haven't been able to find a Profile that would let me print in black and white (I don't know if I am in the right track, but I haven't found any other options controling this)
