I'm wondering if anyone has had any experience with any photo-mosaic creating software and can maybe suggest a good program.

I'm not 100% positive, but I think (free too) Photo Filtre does mosaic.

You should try an online photo-mosaic service.
Example:

http://www.pictosaic.com/photo-mosaic

You select your topics, like cats, flowers, love, car, ...
Some other option (resolution, your image into the mosaic, ...)
You send your image
A few seconds later, it's be back as a photo-mosaic!!!

A new option on pictosaic.com is now available.
Your photo-mosaic can be merged with your original picture.
So, some details can be more preserved.
The options are:
- No merge (as the previous version)
- low merge
- high merge
- and centered merge. Useful if your subject is centered into a landscape, for instance.

Thanks Corzaker, but when I press the "Send My Picture" button, where does the picture appear? Nothing happens?

When you send your picture, you must wait 2 steps:
First during the upload (depending of your file size, the bandwidth, ...), then a progress bar is shown during the process (not very pretty...).
When that is finished, you arrive at a page where you can see "Your mosaic is available in 3 versions:".
Under this text, there are 3 links to see the small format, a sample or to download the real size.
I think that this part of the site is not goodly displayed.
May be that is the reason of your problem?
