firstly the image is far too big to be posted on the web - reduce the size / quality etc especialy for demo purposes Use the crop tool to crop the image back to the sign border or use the square selection tool to select it and cut and paste it to a new image - the rubber / eraser can be used to tidy up any bits left over Don't try editing the lettering - get rid of it and replace it with your own. Use the color picker tool to select the green (or the off white) then use a paint brush to paint over the existing lettering - then replace it with your own

Can I change the text though

Yes - airbrush out the old text and put in the new stuff I used adobe photoshop which is expensive, gimp is free and can easily do this stuff. The trick is to play with the software and follow some tutorials Yes it could be blown up to a large sign but it wouldn't look very good - a large sign like this would probably be done using a vector drawing package which scales up images better and has sharper edges
