I have emailed some jpeg images to a mac user and they arrived as .dat files that she couldn't open. Why and what can I do about it?

Tell the user to rename them to .JPG. The chances are that the user has an anti-virus application that has renamed the files to .DAt as JPG files can be used as a vehicle for viruses and Trojans. Once renamed they cannot be opened automatically by a viewer which would activate the virus.
Once the receiver is sure that they come from a legitimate source they should be readable once they are renamed.
