Hi. I've got a Gateway Desktop G6-350 that has no processor and I'm thinking about getting a new one. Does anybody know what the maximum processor is that I can put in without overclocking?

From the model name, it rolled outta Gateway with a PII 350mhz processor. That would have been a CPU with 100MhzFSB @ 3.5x multiplier.
Don't know the motherboard it came on, but if the board has optional multiplier figures that can be selected by jumpers then you might be able to know the max CPU speed to use by multiplying that number by the FSB.
