my idle cpu temp is always at 36 to 37c, but when do somthing like video editing or mpeg 2 conversions, it can very quickly jump to a max of 58c!! is this normal???

Sounds like you need more case ventilation. As the CPU is working hard, the heat is not getting out of the case soon enough and the temp builds up. This is an easy problem to solve. Add intake and exhaust fans if don't already have.
Summary: Were your temps lower before you reapplied the AS5? Did you use AS5 before or something else? Did you completely remove the old stuff? Clean everything before you applied the AS5? Install the heat...
