I was wondering whether or not I should get the Single core 3700 or the X2 3800 ... money is not an issue

I plan on overclocking. Which is better in terms of gaming?

"money is not an issue"

If money wasn't an issue, you wouldn't even be looking at an X2 3800+...you'd be looking into a dual core CPU with 2 x 1MB L2 cache.

Anyhow, in games that aren't optimized for dual core (which is 99% of them), the X2 3800+ performance lies somewhere between a 3000+ & 3200+ Venice. In other words, the 3700+ San Diego is much better.

If you're into multi-tasking, then the X2 3800+ is the better choice.

Personally, I'd go with a 3200+ Venice which is now selling for under $100, overclock it & ride it out for a while. Then when more apps & games become optimized for dual core, upgrade to an X2. Then again, if you're building from scratch, it might be a good time to go for an AM2 instead of a S939.

I'd get the dual core. The x2 3800 overclocks very well; achieving at least 2.4GHz shouldn't be a problem.

When I said "money isn't an issue", I was referring to the price gap between the 3700 and the X2 3800 because there is a fair price difference between the two (i.e. price isn't a determining factor for me between these two processors)

I know I'm somewhat going off topic here, but..

If I were to use the following setup, what RAM should I use for good overclockability?

Proc: Athlon 3700+
Mobo: DFI LANparty NF4 Ultra-D
PSU: OCZ 520W Modstream PCI-E ready
HDD: Seagate 320 GB
CPU Heatsink: Thermaltake Mini-typhoon Copper (any better HSF out there? this one costs 50 bucks)

Video Card: UNDECIDED - suggestions please

Steging, you obviously don't realize what a potentially good system you have! All you need is a decent video card! If you run out & rebuild just to get PCI-e, you're wasting your money....but I guess it's your money to waste.
